Chewy Pistachio Chocolate cookies
Tell me I'm not the only one who has days when they come back home from work, crave a little sweetness but is also lazy to do the washing and baking. Well look no further, these chocolate pistachio cookies are here to rescue you. The texture is chewy and the flavour reminds me of brownies! I used pistachios but you can coat them in anything you like - almonds, sesame seeds, desiccated coconuts etc.

25g unsalted butter
125g dark chocolate 70% cocoa, chopped
150g light brown sugar
1/2 tablespoon of cocoa powder, sifted
35g plain flour
1/4 tsp baking powder
pinch of salt
80g pistachio nuts, roughly chopped
Pre-heat the oven 190°C/ 160 fan/ gas mark 5. Line a baking tray with parchment paper.
Fill a medium saucepan with water one-quarter full and set over medium to bring the water to simmer. Combine the butter and chocolate into a heatproof bowl and place over the simmering water. Stir gently until completed melted.
Remove the bowl from the saucepan and place it on a tea towel. In a large separate bowl, whisk the egg and light brown sugar until thick and pale. Fold the melted chocolate into the egg mixture.
Add the dry ingredients (plain flour, cocoa powder, baking powder, salt) into the mixture until there are no dry bits remain. Using an ice cream scoop or two spoons, divide into 8 balls and roll them into the chopped pistachios and place them on the prepared baking sheet
These will spread so make sure you leave enough space between them. Bake for 8-10 minutes in the preheated oven. Leave them on the tray for 10 minutes before moving the cookies on a cooling rack.
